This famous drink was made in a special leather container called a simir. This large vessel was made of a nature horses skin, processed in a special way, smoked and smeared with butter. The leather containers were waterproof, air tight and could keep the contents at an unchanging temperature like modern thermos flasks. The best and strongest kymys was always made of mares milk. There are many different recipes. Ingredients: 6-7 litres of water with bread yeast (fermented), 2 litres of mares milk, 200 g of cream, 500 g of brown bread crusts, 3 kg of crushed wheat grain. Mix and churn ingredients, seal in an oak barrel. Let sit for ten hours, churning from time to time. Allow to sit for a final 4-5-hours. Kyorchekh (whipped cream). Ingredients: milk-250g, 35%fat cream-900g, sugar-100g. Churn milk, cream, sugar and jam (or fresh berries). It is one of the Sakha peoples favorite dishes for breakfast or dessert. Frozen kyorchekh is really more delicious than any ice-cream! Ingredients: 1 lb. ground meat 1 cup rice, washed 1 cabbage, cored 2 fresh tomatoes, chopped 1 fresh paprika, chopped carrot, grated onion, chopped Salt, ground pepper: red and black, dill, greenery - to taste 1/4 cup oil cup water tbsp flour Method: 1. Put cabbage in hot water and boil for a few minutes. 2. Combine thoroughly meat, rice, salt, ground pepper. Add chopped onion, dill and greenery. Mix. 3. Separate cabbage leaves and make your rolls with meat and rice mixture inside cabbage. Place the meat mixture on each leaf and fold up envelope fashion. Lay flap down, pour water to cover all rolls in the pot. Simmer, covered, for 1 to 1,5 hours. 4. Grate carrot, chop parsley roots, onion, fresh tomatoes and paprika. 5. Fry onion in oil until golden, add carrot, and parsley roots, then add fresh tomatoes and paprika (or tomato paste) to it and stew for minutes. (use a frying pan). 6. Five to ten minutes before the Rolls is cooked, pour over cabbage rolls fried vegetables and add: chopped green Celery, dill, parsley, green onions, bay leaf, pepper to taste. 7. Sift dry ingredients in bowl and stir in liquid ingredients with wire whisk or spoon until mixed. 2. Rub griddle or fry pan with oil. Heat until water dropped from your hand bounces around. Drop about 1 ladle or 2 large mixing spoon for each pancake. 3. Cook until bubbled all over the top and brown on bottom. Flip and cook until brown on other side. Repeat with the remaining batter, add oil into frying-pan as needed. Keep your griddle very hot at all times. 4. Put 1 tbsp of filling into centre of each pancake and fold up envelope fashion. 5. Put all pancakes into greased pan. Lay flap down. Cover. Cook on low heat several minutes and serve. Make filling: Mix boiled rice, boiled minced meat with mayonnaise and pepper. Put onion into hot pan, fry until golden brown, add grated carrot and simmer. Mix fried vegetables with meat and rice.

In a mixing bowl put flour, baking soda, all ingredients for crust and knead dough. 2. Refrigerate dough for an hour or two to chill. 3. Preheat oven to 350 degrees. Divide dough in 2 parts. Roll dough into desired crusts. Spread grated cheese mixed with fried onions over the crust. Cover with second crust. Bake for minutes.
